Sweet Potato Pie

Try this great comfort food classic sweet potato pie that is a Cake-Porn Favourite!

Prep: 30 minutes  Bake: 1 hour

Ingredients:

For the Pastry:

250g plain flour

175g butter

2 tbsp caster sugar

1/2 tsp salt

1 small egg

60ml water

Make:

Add the flour, sugar and salt into a bowl. Then add the butter and rub the mixture between your finger until it resembles bread crumbs. Then mix the egg and water together until you form a dough. Then put in the fridge until needed. 

For the pie mixture:

500g sweet potato 

125g softened butter

200g caster sugar

125ml milk 

2 eggs

1/2 tsp ground nutmeg

1/2 tsp ground cinnamon 

1 tsp vanilla extract

Make:

Peal and cut the sweet potatoes into chunks. Put the chunks in boiling water and cook until soft. Then pre heat the oven to 180C. Take the pastry out from the fridge and roll out to fit a 9 inch pie dish.

Once the sweet potato has cooked, strain the water and mash the potato until smooth. Then stir in the milk, butter, sugar, nutmeg, cinnamon and vanilla until fully combined. Then pour the filling into the prepared pie dish. 

Then bake in the oven for 55 - 60 minutes, or until a knife comes out clean. The pie will puff up in the oven and then sink when it cools. 

I had left over pastry from this recipe so I made some star decorations to cover the top.
